What comes to mind when you recall your lunchbox growing up? Personally, it doesn’t take much for me to recall the elementary longing to buy my lunch every day. I did get my fair share of greasy squared pizza and milk cartons mind you. However that was only a weekly highlight among years of packed edibles where the best trade option was the love-note from my Mom.
So it was when I posted a view of packing healthy school lunches a few weeks ago, that got me thinking. What DO I remember most about lunches growing up? {Peanut butter and jelly sandwiches that’s what.} But more so, what is it that I’m doing now that will set its own memory for my kids to reminisce about? I’ll tell you…its called a cold grilled-cheese sandwich.
More like…an uncooked wanna-be grilled cheese. Yup, all the healthy food I’ve so earnestly laid before my daughter and she’s enamored with a sandwich I didn’t have time to cook. A picky eater with what’s known as “geographical tongue”, there isn’t much I can consistently get her taste-buds to like. But she loves grilled cheese, and I thought…”its just today as we rush out the door, right”? And I am left now with those infamous thoughts each time she raves about how to make her staple sammie.
So what’s a Mom to do now? For one, enjoy the savings as she demands I pack her lunch each school day. Well that and sneak in veggie straws. Thank goodness we have deceptively healthy snacks and tasty juice flooding my table at an age where white bread reigns supreme. Plus, at five, she loves the practice of making her own lunch now. And as I teach her to skim the butter and cut out cheesy triangles wedges, I just have to smile.
Because maybe this IS what she’ll remember most one day. Paper plates and sunny afternoons. Colorful juice bottles with the fun little spouts. Buttermilk ranch covered carrots. Smeared butter inside soft bread slices to sandwich a slice of american cheese between. And the fact that there must be a crust left behind, whether I’ve cut it off or not.
I know I will.
