I remember holidays of old. The days before kids, when indulgence was optimal. And it never mattered the impending girth that greeted me January 1st. After all, I had resolutions to save me! That however, was before I realized that healthy living could be made so easy. And tasty too…lets certainly not forget that.
So now as my kids get older, I want them to know that healthy eating can be positively scrumptious. And one way? Is using sweet potatoes.
Whether its meatless Mondays or a heartier chili you’re thinking of. I found this great recipe within the Sam’s Club Healthy Living Made Simple app on my iPhone. I never thought of putting sweet potatoes in my chili before this. And after reading the recipe, I couldn’t wait to put my own spin on it.
Personally? I don’t care for meat too much. Whether its for a tastebud or budget reasoning, I often leave meat out. Add the fact my daughter doesn’t care for red meat only makes my meatless quest more intensive. This recipe was perfect to try. Just enough heat to pair with the sweet!
Let get started with the sweet potatoes. The recipe only calls for 1-1/2. But this is an easy recipe to modify and crockpot as well {more on that later}. So in true follow-the-recipe format. Simply peel and cube your potatoes. I found it helpful to also soak them in water while they waited.
Next up, saute your onions in the olive oil. I used only 1/2 a medium onion instead {not a big onion fan}. I also added more chili powder. It was already smelling so good!
While I waited on the potatoes to soften, I mixed the corn and beans together. For my chili, I used a tri-bean blend of black, pinto, and red kidney beans. If you look close you may even see the Mexican seasoned corn. If ever possible, I’d rather add seasoned veggies then my own seasonings to the pot.
The potatoes softened up really well. I merged all the remaining ingredients and was already drooling. This included grating up my orange peel to toss in. I used the peel from a California Clementine.
And there you have it. A picture perfect look at sweet potato chili. I of course, wanted to modify it a bit further. I added a pound of venison. As well as another can of tri-blend beans and mexican stewed tomatoes. To keep that orange zest amplified, I added in the grated peel of 2 more California Clementines.
And presto! We have a full crock-pot of sweet potato chili to enjoy! I have really loved testing out this recipe. And I’m sure to visit the Sam’s Club Healthy Living Made Simple app again for new magazine issues. This chili is so tasty. And its finding awesome ways to incorporate fun veggies that will help keep my family healthier.
