Motherhood. Not only is it about chocolate and coffee. But also about memories. And who can remember the delectable crunchiness of crispy M&M’s® back in 2004?
I have to admit…I love them. Hands down these are one of my favorites now. They’re just so crispy crunchy! And at just 180 calories for an individual size, these babies are perfect for hiding in the laundry room.
Of course, when conspiring new ways to create M&M’s® Crispy bundt cakes. I bought like 5 BIG bags from the display aisle {I hear they’re also in the baking aisle}. Two bags for creating the recipe…two for testing the recipe. And one big bag to inhale with the kids on the way home.
Yup. We’re talking two bags of M&M’s® goodness in one rice crispy, marshmallowy, crispy candy inspired bundt cake. Are you ready for this awesomeness? Because we sure were!
To start, you’ll need a bundt pan. Lightly butter the sides of the bundt pan. Then pour one {medium} bag of the M&M’s® Crispy candies to line the bottom of the pan.
Now to the stove we go. Set your flame on low, and begin melting one stick of unsalted butter. If your butter begins to brown, you’re flame is too high.
Once the butter has melted, empty one bag of large marshmallows into your cooking pan w/on stick butter. Stir until smooth and melted. Remove from stove.
Next, stir in 4-5 cups of any cripsy rice cereal. I used a lightly sweetened, frosted rice cereal for this recipe. As the mixture will be cooling, stir quickly to evenly coat the cereal.
Once coated, pour in 1/2 bag small marshmallows and stir evenly throughout.
Now that the mixture is cooling, the small marshmallows won’t be melted entirely. Mmmm…can I get an *amen* for buttery and marshmallowy goodness ya’ll?
Finally, add in one more medium bag of M&M’s® Crispy candies. Yes. The – whole – bag. Stir in lightly however. You want them mixed in. However too much action and you’ll see them begin to break apart.
Now, fold entire contents into the prepared bundt pan. Once bundt pan is filled, firmly press mixture into the pan with a buttered spatula or spoon. This will ensure the top layer of M&M’s® are embedded into the crispy cake. Set aside to allow for cooling.
I admit…we’re often too impatient and our M&M’s® Crispy Cake gets covered and slid into the refrigerator. One hour later, I take it out – cover it with a large plate – and flip it over to our absolute delight.
And voila! Your M&M’s® Crispy Cake is ready to serve.
