Summer is here. And with the heat comes the sweet treat we all love…ice cream! So grab let me grab you a bowl, because you’re going to love what I’m dishing up today.
One of my favorite way to curl up to a big bowl of creamy iced comfort, is to garnish it with fresh fruit. Which, may be why I love shopping at Walmart so much. Because with kids, I love the free samples offered. Like really love. Like, I may have shopped for another half hour just to indulge in my ice creamy peach passion.
And hands down, my favorite vanilla ice cream is Vanilla Bean. And Blue Bunny offers so many great varieties that tempts any taste-bud. So they created a fantastic premium cool treat that blends perfectly with the fresh ripened peaches.
So it kind of goes without saying, I may have jumped at the chance to share this yumtastic brand’s cool confections. And that is the bonus with blogging. Its amazing that you get to authentically share the products you already enjoy. I also picked up the Blue Bunny Double Strawberry variety too.
Which…for an easy Strawberry Shortcake treat in the summer? Just pop a slice of pound cake, biscuit, or shortbread next to a few fresh summer berries and top with a scoop of Double Strawberry. Its just that deliciously easy peeps!
Feel like getting more involved in slicing, dicing, and smashing a more conventional strawberry topping? Then saddle up. Because I’ll show you how to toss together one of my ultimate indulgences. A sweet treat comprised of fresh strawberries garnishing vanilla bean ice cream over a rich chocolate brownie soaked in coconut milk.
We’re going to start with tearing a brownie up into bite size pieces. Then spoon in an unsweetened coconut milk. I cut up 5-6 large strawberries {1/2 pound} and mashed them with 1/8 cup xylitol. An equal measurement sugar alternative, you’d use the same amount for white sugar.
Then scoop your Blue Bunny vanilla bean ice cream over your chocolate brownie. One big single scoop worked well in my dessert dish. I topped it next with my sweetened strawberry mash.
Last but certainly not least? Crumble crunchy, roasted coconut chips over top. While more drizzled coconut milk over top crowns this perfect summer treat. Mmmm…just looking at it makes me want another one!

Will you ever have the ice cream by Blue Bunny in Cincinnati, Ohio called “Summer Berries”?We have looked for this ice cream in Cincy for several years. We bought it in Publix or Walmart in Pinellas County, Florida. It became our all time favorite! Let me know, please!
