To each their own. But everyone needs breakfast. And I admit my family loves our meals simple, fast, and easy. But I also demand its something filled with real ingredients that offer quality and convenience. And guess what I found?
The new Quaker® Real Medleys® Yogurt Cups. I was shopping at Walmart and spotted a demo. The food rep, Steve, was whipping up a new batch of the Cinnamon Apple variety. He poured in ice cold milk {won’t activate the yogurt otherwise}. Issued a quick stir. And then he was dishing out dollops to eager patrons in less than 2 minutes.
Shelf-stable yogurt…in a single serve cup of multi-grain granola, real fruit, and even crunchy nuts! You’ve seen nothing like this before. And I took one look at it and thought…breakfast gift basket! Seriously, I have a family member that isn’t feeling well. And what can be more satisfying than 25 grams of whole grains and 10 grams of protein {with 1/2 cup milk}?
So I picked up apples {they keep the doctor away don’t you know}. A bright yellow reusable shopping bag. Then headed to the breakfast aisle. Right in with the cereal {next to the granola} I selected Apple Cinnamon and Strawberry Almond varieties. They even have a Raspberry Pecan flavor!
Our breakfast aisle is near the milk. Meaning I also grabbed a 1/2 gallon so this “thinking of you” bag would be complete. But it gets even better for you! Yogurt and granola is a staple in our house. And one way I love to serve it? Over warm spiced apples. Which works great with the Quaker® Real Medleys® Yogurt Cups
Start with 1/4-1/2 cup real unsalted butter. I cube it up so it melts faster. Then set it over a medium heat.
Next, dice or slice up your apples. I cooked two huge granny smiths today. And I slice my apples like I do potatoes, in thin slices. But if you don’t mind them simmering longer, cut them chunkier. Then they’ll look just like what you see at your favorite restaurant.
Then toss in 1 Tsp Cinnamon and 1/2 Tsp Apple Pie spice. I also like adding a dash of nutmeg. Then let them simmer for 15 minutes.
At this point, the apples are done and can easily be served. But I like to push the apples to one side and sprinkle in 1/4 cup brown sugar. Light or dark, both work…but I’ve used the dark here. Gently work in the brown sugar so it melts into the butter. Now set your flame on low, and let it simmer for another 5-10 minutes.
The end result is a syrupy, spiced apple heaven. These apples are great on everything, but perfect to ladle into muffin cups. And then top with your Quaker® Real Medleys® Yogurt Cups. And then a breeze to serve. Crunchy. Cool. Yum.
