What…a…week! Parenting brings so many joys. But it also can bring those days where this Mom needs a bit of help. So on those busy days, I’m thankful to have Farm Rich in the freezer to lean on for bringing dinner together!
Because while I may not be able to be everywhere all the time? I can make sure when we are together, I make every moment count. So pile up on the couch with us. Because here’s one of my favorite platters to turn a crazy day into an impromptu foodie night. Now who’s ready for loaded potato skins?
And while life is unpredictable, real food shouldn’t be. So I when stocking the freezer at Kroger, I love that Farm Rich products are made with great ingredients. One favorite we serve are the Loaded Potato Skins. Hand stuffed, these Idaho potatoes are topped with 100% real cheddar cheese. And then there’s the bacon.
Even when life isn’t crazy…some nights “Mom” just needs that Farm Rich wingman in the kitchen. Know what I mean? So one platter I can rely on popping together is created with the Farm Rich Loaded Potato Skins. I love dishing up this hearty, feel-good food that I know everyone will enjoy.
And I enjoy even more on those nights that overloaded days are saved with the microwave. Granted, my white counter-top beauty often feels left out. But with the fact these Loaded Potato Skins are fully cooked? I only need 45 seconds to start feeding hungry bellies. Or if I’m not trying to save an extra 15 minutes, I just pop them in the oven at 400°.
However you love to warm them up, once heated slice diagonally and plate them in a circle. This will leave room for your dip bowl and celery. Another quick time saver to note? The dip can be served cold as the Kroger brand chicken is already pre-cooked.
Now comes the magic! Before we stopped eating wheat, I loved to pile in the Farm Rich boneless buffalo Chicken Bites in the center. OMG…100% real white meat chicken, perfectly sauced, and just as fast to serve. Now however I need to get a bit more creative but Kroger always has great store brand products to rely on.
So while my Loaded Potato Skins are in the microwave; I pull out my goodies to create a layered buffalo chicken dip. We have shredded cheddar cheese, sour cream, chives, and a can of Kroger brand buffalo sauced chicken. Then grab your bowl, and begin layering in your ingredients.
First the sour cream is spooned in and up the sides. This will create a good center hole for later ingredients. Then sprinkle in your shredded cheese. Followed by freshly chopped chives. Lastly, gently fold in your buffalo chicken filling the center.
More buffalo wing sauce can be placed on the side for those that like more heat. But this platter serves up an easy way to enjoy the Loaded Potato Skins with a hint of buffalo chicken. All mixed into a bowl we’d already reserved for our sour cream and chives. The platter is then finished with celery sticks.
