There are few things in the world that I love more than coffee. That said, most of those items make coffee even better. Namely…how much I love breakfast foods. So naturally, when my time is short and the days are long its all about turning dinner into Brinner.
So just what are the impromptu Brinner mainstays? That would be Potatoes, Pancakes, and Brown ‘N Serve links. Yes, eggs are often invited to the party. But our primary three are what serve up a heap of comfort on a long day. Of course favorite foods are as comforting to make as much as eat too. Especially when we decide its cause for celebrating with Pancake Poppers.
This idea started with the fact that I like my pancakes a bit heavier. And it ended with the express desire to figure out a fun way to serve pancakes when my kids don’t expressly like to use syrup. To which the culmination was unpacking our long lost-in-storage Cake Pops appliance. And *poof*, the kids knew by my smile that they were in for something new.
So just how does our favorite Brinner tradition work? Well…first, I slice up our potatoes to pan fry. While I wait the 20 minutes for them to soften, I quickly heat up our Brown ‘N Serve maple links. In just 30 seconds (or 3 minutes in a pan) your microwave can deliver a full pound of fully cooked breakfast meat. How convenient is that?

Now heated, allow your Brown ‘N Serve links to cool to the touch, and mix up your pancake batter. As I noted before, I like to make them a tad thicker with either a little less water or a little more pancake mix. Once your pancake batter is completed, turn on your Cake Pop appliance to heat.
Next slice the Brown & Serve links into 1/2 inch chucks. Skewer the links onto the top of your Cake Pop sticks. And now you’re ready to make your Pancake Poppers!
Pour in your pancake batter to each Pops compartment. Immediately lay a Brown & Serve link stick across the batter. Close and flip to cook.
Once your Pancake Poppers are cooked, pop them out and allow them to cool. Then sprinkle with powdered sugar to enjoy. The best part is that these Brown ‘N Serve maple links have replaced our need for syrup. And can be enjoyed alone or alongside other Brinner favorites like eggs and potatoes. Proving that serving breakfast all day is easy, and not just limited to your mornings.
