As much as I love celebrating the holidays, there is one thing I love even more. All the food that somehow becomes even more glorious after the big day! And for that, I relish Thanksgiving, Thanksmas, and Christmas alike for bringing together all my comfort food traditions!
Because food is glorious isn’t it? For me, its more than just a dish to pass. Its the people its enjoyed with. And the joy it continues to bring as it evolves from plate to plate.

Like most, I love seeing that traditional meal spread out on the table. And nothing makes a meal more holiday-worthy than warm and creamy mashed potatoes. Which one reason I use Betty Crocker potatoes, its that it’s nice to keep the taters flexible to any dinner schedule. Not to mention they’re 100% real potatoes farmed in the United States.
After Thanksgiving last week, I wanted my leftovers transformed into comfort food made simple. Which nothing is more worthy of a deep bowl and a big spoon than a hearty casserole. So this year, I’ve layered together my 4 leftover holiday favorites. Are you ready to see how I brought them together?
Ingredient #1: Green Beans
To start, you’ll need a baking dish with a lid {or tinfoil to cover}. And preheat your oven to 350° degrees. I opened two cans of cut green beans to drain. And then used both to begin filling the casserole bowl.
Ingredient #2: Turkey
Now you get to bring out that amazing leftover turkey. You’ll want bite-size pieces for easier serving. So I chopped this turkey up and then layered it in on top of the green beans. Personally, I also enjoy sprinkling some pepper in either now or after the soup has been poured in.
Ingredient #3: Butternut Squash Soup
Rich and full of flavor, a traditional Butternut Squash soup brings a natural sweetness to this casserole. It also brings the perfect seasonings together such as: ginger, onion, and garlic to mingle with cinnamon and nutmeg. Lets just say when combined with green beans and turkey its only begging for one other thing.
Ingredient #4: Butter & Herb Mashed Potatoes
One reason I’m used to leftover mashed potatoes, is that I’d be slicing and dicing 5-10 pounds of potatoes so we’d have “enough”. But with using Betty Crocker now, I only make what we actually need, since more can easily be added. Especially when serving up the flavored mashed taters like the Butter & Herb variety.
And the last thing this dish demands, is one package of Betty Crocker mashed potatoes to ladle on top. Now between you and me, you can completely cover this dish potatoes. I like to just spread them in the center however so the soup can bubble and boil around the edges. Place in the oven for 30-45 minutes to heat throughout before serving.
