Not only will it make a holiday table sparkle, but these little go-to cornish game hens will make sure to keep your dinner table special all winter too. To begin? All you’ll need are your Tyson® All Natural Premium Cornish Hens, fresh herbs, unsalted butter, and one large lemon. Preheat your oven to 350° degrees. Rinse your poultry and set aside. Next get your working table prepped by slicing the lemon into wedges. As well as slicing the butter into pats for easy insertion as well.
The herbs used in this recipe, are Rosemary and Thyme. You’ll need at least 2-3 sprigs of each, rinsed and set aside. When ready, put your chicken in its roasted pan, and stuff 2 lemon wedges in the cavity. Trussing with kitchen twine is optimal at this point but optional.
Then you’ll loosen the skin around the breast and stuff your herbs and 1-2 pats of butter inside. Lastly, sprinkle your Tyson® All Natural Premium Cornish Hens with sea salt and black pepper. Then put them in the preheated oven for 1 hour. Remember to baste throughout the cooking time.
Now its time to prep those veggies! I brought out a separate pan to roast brussel sprouts, asparagus, squash, sweet bell peppers and red onions. Lightly coat with olive oil and sprinkle with sea salt. Using my final lemon slice, I squeezed lemon juice throughout. Tossed the veggies and then set aside.
When chicken has been roasted for 1 hour, turn your oven up to 400° degrees for 15 minutes. This will allow your roasted game hen a nice golden brown skin. Its also when you’ll put in your veggies to roast for 30-45 minutes.
Once your chicken is out, allow it to cool as you prepare your serving platter. I gathered up a handful of red lettuce for each Tyson® All Natural Premium Cornish Hen, to rest on. You’ll have a lot of juice in the cavity of the Cornish Hen, so you will want to drain the birds slightly before plating.
Next, you’re veggies should be fully roasted and ready to plate as well. Spoon the lot in and around your Cornish Hens and serve to the masses. For me and my children, the twin pack purchased is typically more than sufficient.
And with that, brunch…lunch…or dinner is served! For anyone wondering, the stuffed herbs never present a problem when serving as well. Just pull back the skin and your herbs can either be removed or served as well. The chicken will be moist and offer a wonderful buttery, lemon herb essence!
