One thing I love about summer? All the fresh produce! I’ve always been a fan of strawberry everything. So when I saw the new Smucker’s Fruit & Honey Strawberry Jalapeno Fruit Spread at Walmart? OMG…I just had to try it over a cream cheese enchilada!
So I rounded up the kiddos and went out to pick up a jar. Even better was that I unlocked an ibotta offer to earn $1.00 off Smucker’s Fruit & Honey Fruit Spread. Nothing better than satisfying your tastebuds and your budget!
Once home, I gathered up all the necessary goodies and preheated the oven to 350° degrees.
For the sauce:
1/4 c. Smuckers Fruit & Honey Strawberry Jalapeno Fruit Spread
1/4 c. Orange Juice
1 c. Strawberries, sliced
Pinch of Salt
I love one pan wonders. And this dessert doesn’t dissappoint. I started by reaching for my favorite pan. Enabled with a stainless steel handle it transfers to the oven in one swoop.
So to start, I combined the fruit spread, orange juice, sliced strawberries, and pinch of salt. Stir and bring to a light boil and set aside.
For the filling:
8 oz. Cream Cheese
1/2 c. Powdered Sugar
1 tsp. Vanilla
Next, to create the filling I used a bowl to combine 8oz of softened cream cheese with 1/2 cup powdered sugar by hand. Stir in 1 tsp of Vanilla and reach for your corn tortillas.
I love ordering up fresh homemade corn tortillas from a local guatemalan restuarant. Thick and hearty, spread about 2-3 tablespoons of cream cheese filling on each one you will need. Be aware that corn tortillas can split more as they roll up. Then place seam side down in your baking dish. For me, I’ll place them directly into my pan. Then ladle the strawberry jalapeno infused syrup over top.
Place into your preheated oven and bake for 10 minutes. Using a hand mitten, pull out your pan (or dish) out of the oven. Plate up your dessert enchiladas and finish to serve by drizzling your strawberry jalapeno infused syrup over top. Enjoy with a sprinkle of powdered sugar!
