September is here, and the back to school season is in full swing! As as Mom of two, I don’t mind serving up a bowl of fruity fun before we’re running off to greet the day. And packing lunches wouldn’t be the same with out this autumn inspired candy corn treat! Especially when that having it all all means real value, real delicious taste!
So admittedly…I’ve got a little bit of a thing for Fruity PEBBLES™. I kinda also have a thing for marshmallows. So when I’m not frosting cakes with this fruity inspiration of a cereal. You can bet I’m finding even more ways to bust out of the bowl!
And I do that…with another pantry favorite, Cocoa PEBBLES™ cereal! A smooth cocoa flavor, this is the perfect cereal to add to candy corn flavored marshmallows for the perfect autumn inspired treat. Since I always pack the kids’ lunches each day, I love tucking in a small sweet treat.
To begin, I measure out 4 cups the seasonal candy corn flavored marshmallows. Set the remainder of the bag aside. Then melt down the marshmallows with 8 tbsp of butter.
Once you’ve melted the butter and marshmallows down, add 1 pkg of instant Tapioca pudding mix. This small package utilizes 2 cups liquid of you’re using a larger reusable package. Stir to mix well.
By this point, your melted marshmallow mixture has begun to cool. So gently stir in the remainder of your candy corn flavored marshmallows. You’ll just need to coat the new marshmallows. Now you’re ready to add in the chocolaty Cocoa PEBBLES™.
One thing I love about shopping at Walmart for this cereal, is that it’s breakfast cereal aisle stocks a wide range of boxes as well as super value bags. Just measure out 6 cups of Cocoa PEBBLES™ and stir into your awaiting molten marshmallows.
When it comes to forming marshmallow treats, I like to use a cookie sheet and parchment paper to form shallow bars. You could also use a 9×13 inch pan. But to keep the lunch prep production at a brisk pace, the cookie sheet allows me to both press the bars to the perfect depth, and transfer to the freezer for 15 minutes before slicing.
As you can see, stirring in the marshmallows in stages allows for those glorious marshy bits that we all love. And as a whole, using the Tapioca pudding allows for subtle added flavor and ultra gooey texture. Last but not least, find yourself the good honey-based candy corn candies sold this season. And place sporadically on top of each bar.
