Which, you know I love simply, easy, or inventive recipes. So long ago when faced with a busy Sunday, a slow cooker full of chicken, and no marinade…I poured in salsa. And the idea for all things slow cooked with Pace® was born.
The thing about Pace® is that it’s a brand that you’re whole family can love. With a wide variety of heat, it can give just the right amount of that southwest flavor your seeking. And what I really like, is using the Pace® Salsa for dips and the Pace® Picante sauce for baking. Or in this case, using over chicken thighs in a slow cooker.
So when I ran to Walmart last week, I made sure to pick up two jars. One of the mild Pace® Picante Sauce and another of the mild Pace® Chunky Salsa. Great to always have with chips, they’re also both great for jazzing up the mundane recipe.
For starters, what I was telling you before. When faced with using a traditional salad dressing or tomato sauce, give your slow cooker some zip with the Pace® Picante Sauce! This isn’t salsa peeps, but rather a zesty sauce that does a great job stewing up meats. For instance, it does wonderful over chicken thighs.
So after giving my prepackaged chicken thighs a rinse, they layered into a 2.5 quart slow cooker. Then I poured 1/2 the Pace® Picante Sauce over the chicken. Then I threw in a few whole stems of Cilantro and Green Onion. I set the heat to HIGH. And left them to cook 3 hours before serving.
Do note that every slow cooker is different and can heat/cook as such, you should adjust your cooking time to when your meat is cooked completely before plating. This is wonderful when served over brown rice. I also added a few chopped green onions for extra color.
Another great game time save? Giving that boring chip dip a make over! Here you’ll see a Jalapeno Cheddar chip dip (12oz container). It just needed something more however. And the fact that Pace® is made with handpicked jalapenos? Well, I tossed the chip dip into a bowl and stirred in 1/2 cup sour cream. Then added 1 cup Pace® Chunky Salsa, mild.
Stirred up, it has a light (but not questionable) pink hue. I lobbed a dollop of sour cream and salsa on top with cut green onions. Then set it amidst a platter of tortilla chips, pretzels, and a barrage of great veggies.
With using the chip dip as a base, this revitalized dip has a great consistency. And this is a wonderful way to incorporate not just your favorite wavy or tortilla chips, but more veggies and pretzels too.
